Power up the ac drive and see that you have voltage. The ac drive is defaulted to initially run at 5 Hz. Then press the run key on the ac drive and note the motor direction. That's all there is to testing it. The rest of the settings all deal with preferences. For instance, I have set my acceleration time to 10 seconds (default was 5) and deceleration to 10. You can set it to coast to a stop or specify how quick you want it to stop. There are a lot of options you can select and they are all explained in the manual.
Replying to your doubts;
1. In ac drives centrifugal pump curves, it will show you variation in head, power and efficiency with flow. Your second assumption of delivering flow at constant header pressure is somewhat not correct unless you have almost flatter curve or impeller is sized such that shift is nearly horizontal.

3. Before you switch to power saving scheme, I will suggest you to refer the available literature and understand, you will decide/calculate the potential for making energy efficient system and buy ac drives in China.
AC drives from China introduce transients with extremely fast voltage rise times into the circuits that can quickly destroy the insulation in older non-inverter duty motors. There have been many motor design improvements since ac drives came on the scene once it was apparent that ac drives are here to stay. Inverter duty motors have design changes like increased winding slot insulation, increased first turn insulation and increased phase-to-phase insulation to withstand peaks of up to 1600 volts. Another frequent mistake made is slowing older motors down below 1/2 rated speed (<30HZ) which creates overheating due to the motor fan not moving enough air. Contact your ac drives manufacturer.
